Effect of pre- and postharvest factors on nitrate contents of radish and Chinese cabbage.

This study was conducted to evaluate the effects of harvest date, cultivation area, plant part, storage temperature, and PE film packaging on nitrate levels in fresh radishes and Chinese cabbages. Nitrate content showed a highest level at sample harvested in mid-November 1999; as harvest date was delayed nitrate content was decreased. Nitrate contents were also variable depending on the cultivation area and plant part. Radish contained higher levels of nitrate in the epidermis compared with xylem. Chinese cabbage had higher nitrate contents in outer leaves than in inner leaves. Substantial loss of nitrate and accumulation of nitrite occurred more evidently in samples held at 20 deg C for 45 days. This conversion of nitrate to nitrite was inhibited by low temperature and PE film packaging treatment.
