Effect of cultivar and maturity stage on some characteristics of papaya fruits following harvesting.

บทคัดย่อ
Fruits of papayas cv. Sunrise Solo and Tainung were harvested when the peel was 100% pale green, 90% pale green and 10% yellow or 50% pale green and 50% yellow. Observations for 11 days following harvest showed that the fruits of Tainung lost less mass than those of Sunrise Solo, and delay in harvesting increased loss of mass and increased and accelerated softening, particularly in Sunrise Solo. Regardless of harvesting date and cultivar, starch concentration in the fruit pulp gradually decreased and that of soluble reducing sugars gradually increased following harvest.
