บทคัดย่อ

The composition of strawberry aroma is influenced by cultivar, maturity, and storage.

The chemical composition of strawberry fruit aroma, cultivar differences, maturity effects, the postharvest environment, and the mechanisms of synthesis of esters and furanones (the main aroma compounds in strawberries) are discussed.
