Physiological changes of sugarapple fruit during the post-harvest storage.

A laboratory experiment was carried out in 1996-98. Postharvest fruits of sugarapple (Annona squamosa) were stored at a room temperature of 27-33 deg C and RH 85-90%. After 2-3 days, fruits softened, the peel split and the climacteric peak appeared. The permeability of the pulp cytomembrane increased markedly, and this was closely correlated with the pH value (r = 0.9015). When the fruits began softening, the activities of peroxidase and superoxide dismutase reached a maximum. The activity of catalase was highest at harvest and continuously decreased during storage. The activity of polyphenol oxidase [catechol oxidase] in pulp was very low and gradually decreased with increase in storage time.
