Effects of calcium treatment on physiological and biochemical changes in shiitake (Lentinus edodes) during the post-harvest period.

Shiitake (Lentinula edodes) fruiting bodies were vacuum infiltrated with calcium chloride solution in order to determine the influence of this treatment on physiological and biochemical changes. Results showed that CaCl2 treatment at concentrations of 0.005, 0.01, 0.03, 0.06 and 0.09 mol/L markedly inhibited postharvest respiration and ethylene production, decreased the loss of soluble solids, protein, reducing sugars, starch, organic acids, vitamin C and fibre, significantly restricted the increase of cell membrane permeability, and thus enhanced the quality of shiitake in storage. Better results were obtained with CaCl2 treatments at 0.01, 0.03, 0.06 mmol/L. The physiological and biochemical changes in shiitake mushrooms treated with calcium inhibitor EGTA at 0.005 mol/L were significantly speeded up.
