บทคัดย่อ
The lipolytic activity of T. roseum, present in the microflora of hazelnut, was studied at 25 deg C, and 80, 85 and 90% relative humidity. In addition, water was added to hazelnuts to produce hydrolysis. Triglyceride decomposition and partial glyceride production were examined for 30 days.
