PO2 - measurement in tissue of zucchini-squash stored at different oxygen partial pressures.

Zucchini (cv. Ambassador) fruits were stored at 10 deg C for 7, 14 or 21 days at oxygen partial pressures (pO2) of 2, 5, 8 or 21 kPa. The pO2 of fruit tissue was measured in fruits held at 10 deg C and atmospheric O2 concentration. Cross-sections of fruits showed distinct O2 profiles. Highest pO2 values were found in the second tenth part of the fruit radius from the outside and lowest values in the area of the 7th to 10th part of the fruit radius. The change from higher to lower pO2 in the tissue was correlated with the change from flesh tissue to core tissue. The lower the pO2 of the storage atmosphere the lower were the pO2 values found in the tissue, but the profile flattened.
