Postharvest research and handling of litchi in China - a review.

This paper reviews the advances in postharvest handling research and practice on litchi (Litchi chinensis) over the recent years in China. It covers the multi-faceted aspects of litchi postharvest physiology, including respiration, ethylene release, enzyme metabolism (such as that of polyphenol oxidase [catechol oxidase], peroxidase, superoxide dismutase, phenylalanine ammonia-lyase, lipoxidase [lipoxygenase] and ascorbic acid oxidase [ascorbate oxidase]), water loss, composition, membrane leakage, alcohol, pH value, phenolic content, pigment and free radical in litchi pericarp and pulp. These studies have focused on the browning of the pericarp. The combination of preharvest cultivation, postharvest handling chain and "cold chain" are emphasized so as to effectively reduce postharvest losses of litchi.
