Effect of leaf removal on postharvest response of the fruit of dominico-harton plantain (Musa aab Simmonds).

The effect of selective leaf removal on the ripening of plantain cv. Dominico-Harton fruits was evaluated from November 1997 to February 1999, at El Agrado, Montenegro, Quindio, Colombia. The bunches were harvested at the maturity stage and stored at environmental temperature. Weight, central perimeter, starch and total sugar concentration were measured in green and ripe fruits. Weight loss during ripening was greater in fruits from plants with 9 leaves (6 upper and 3 lower leaves), while fruits from plants with 3 upper leaves and 3 intermediate ones lost less than 2% of their fresh weight during ripening. Pulp weight increased and skin weight decreased during ripening. Skin weight decreased significantly in fruits from plants with 9 leaves (6 upper and 3 lower leaves), while it was less in fruits with 3 upper leaves and 3 intermediate ones. The pulp and skin of fruits from plants with greater leaf area showed a larger concentration of dry matter in both the green and ripening stages. In ripening fruits, the pulp showed lower starch concentration with leaf removal, suggesting the occurrence of faster hydrolysis as a consequence of leaf loss during ripening.
