Quality changes of two sugar snap pea cultivars during cold storage.

A study was conducted on pea cultivars Sugar Snap and Sugar Daddy to correlate some biochemical and physical changes during postharvest storage. No differences were found in the aroma, but weight and soluble solids content decreased during storage. After 14 days, Sugar Snap peas had lost less weight and soluble solids than Sugar Daddy. Sugar Snap had higher internal temperature than Sugar Daddy. An increase in ethylene in the sealed bags was accompanied by an increase in chlorophyllase activity, but not in peroxidase activity.
