Effect of cooling period on quality and ripening of Doyenne du Comice pears.

The effects of the cold period on the ripening pattern and quality parameters of pear cv. Doyenne du Comice grown in Lleida, Spain were studied. The fruits were held in cold storage (1 deg C; 95% relative humidity) for 1, 2, 3 and 4 weeks. After storage, the fruits were kept for 1 and 4 days at 20 deg C. At harvest and after a week in cold storage, no changes in ripeness were observed. After 2 weeks of cold storage, the fruits showed typical climacteric patterns and exhibited progressively higher ethylene production rates with further storage. Firmness decreased to values of 1.5 kg and the colour parameter increased. Only slight changes in titratable acidity were observed after removal and during all the rewarming periods. The soluble solids content was similar for all the treatments. Collectively, the results suggests that Doyenne du Comice pears require a minimum of 2 weeks at 1 deg C to ripen normally at 20 deg C, and quality changes are directly related to the increase in ethylene production
