Advances in research on strawberry fruit softening mechanisms and its regulation.

This paper briefly reviews: the cellular and respiratory changes during strawberry ripening; the activity and the role of cell wall hydrolases, including D-galacturonase (polygalacturonase), cellulases and pectinmethylesterases, in the strawberry fruit softening process; the effects of endogenous hormones, including ethylene, auxins, gibberellins, cytokinins, abscisic acid, and their amounts, on fruit softening; and the effect of calcium on fruit ripening and its role in fruit softening. Methods for controlling fruit softening, including preharvest and postharvest protection of fruits, spraying with calcium, refrigeration, controlled atmospheric storage, coatings, electron beam irradiation, heat treatment and chemical preservatives, are discussed.
