The effects of CaCl2 and 6-BA [benzyladenine] on respiratory intensity and storage quality of two Chinese jujube (Ziziphus jujube) cultivars, Zanhuang Dazao and Shenglizao, stored at 0 deg C were investigated. During storage, fruits of both cultivars initially accumulated vitamin C, followed by a gradual decrease. Flesh firmness also gradually decreased, and was significantly and negatively correlated with storage time. Treatment with 1% CaCl2, 15 mg 6-BA/litre and 1% CaCl2 + 15 mg 6-BA/litre, applied to jujube fruits before harvest, dereased the respiratory intensity of postharvest jujube, but the effects were not significant. Treatment with 1% CaCl2 or 1% CaCl2 + 15 mg 6-BA/litre reduced the rate of vitamin C loss and of the decrease in flesh firmness and percentage fresh fruit. Treatment with 1% CaCl2 improved the flesh firmness of Zanhuang Dazao and Shenglizao by 1.2 and 1.5 kg/cm2, respectively, at the last stage of storage. Fresh fruit percentage was also improved by 8.2 and 5.4%, respectively. Treatment with 1% CaCl2 and 1% CaCl2 + 15 mg 6-BA/litre improved flesh firmness by 5 kg/cm2 and 2.1 kg/cm2, respectively, and increased fresh fruit percentage by 17.8 and 11.7%, respectively, at the last stage of storage. The effect of 15 mg 6-BA/litre on respiratory intensity and fruit quality was lower than that of the CaCl2 treatment.
