Postharvest physiology and storage technology of asparagus.

Electrolyte leakage, respiratory rate, and contents of sugar and soluble solids of asparagus were determined, and quality of asparagus products was investigated after harvest and during the storage period. Packaging in 0.02 mm polyethylene bags with 0.5 cm holes and storage at 2-4 deg C gave the best results, with about 90% of suitable quality after storage for 15-20 days. Storage at -1 deg C to 1 deg C for more than 10 days caused chilling injury.
