Simulation model for the calculation of internal gas exchange in apple fruits.

Internal concentrations of the respiratory gases O2 and CO2 in apple fruits are one of the factors influencing the development of physiological disorders, like flesh browning, core browning and formation of cavities in 'Braeburn' apples. Dependent on diffusion properties, respiratory behaviour of the fruit and surrounding atmosphere O2- and CO2-concentrations could exceed detrimental levels. A simulation procedure was developed to get more information about the composition of the internal gas atmosphere. With this simulation model, the distribution of internal gas concentrations and respiratory rates in apples and many other fruits can be represented dependent on several parameters and on time. The model may also be used for optimization of controlled atmosphere and modified atmosphere conditions.
