Immature artichoke (C. scolymus cv. Blanca de Tudela) heads were stored in glass jars at 0, 6, 9 or 17 deg C for 16 days. CO2 production during storage was in the range 70-140, 40-65, 30-40 and 20-35 ml at 17, 9, 6 and 0 deg C, respectively. Ethylene emission was very low during storage, reaching a value of 0.08 micro l at 17 deg C. Weight loss was 0.8, 1.3 and 2.9% of the fresh weight at 0, 6 and 9 deg C. After 16 days, only artichokes stored at 0 or 6 deg C were acceptable in terms of visual quality.
