The effect of generally regarded as safe (GRAS) compounds, potassium metabisulfite at 250 ppm, acetaldehyde at 70 ppm and cinnamaldehyde at 30 ppm, on the control of brown spot (caused by Gliocephlalotrichum microchlamydosporum) in rambutans was investigated. Inoculated and uninoculated fruits were dipped in solutions containing GRAS compounds for 20 minutes and stored at 13.5 deg C and 95% relative humidity for 14 days. Complete inhibition of radial mycelial growth and germination was observed with potassium metasulfide, acetaldehyde and cinnamaldehyde. Fruits dipped in GRAS compounds had low disease incidence and severity, high colour retention and over-all quality compared to control frutis.
