The role of ethylene (at 0 and 3 ppm) in peach fruit postharvest life was studied. Fruit mealiness, flesh browning, and bleeding symptoms were evaluated weekly on peach cv. Elegant Lady stored at 0 deg C for 3 weeks. The effect of ethylene on free water of peach cv. 'O'Henry' was also investigated during storage at 0 and 5 deg C for 2 to 4 weeks. Development of visual mealiness symptoms was delayed in fruits stored in 3 ppm ethylene compared to fruits stored under ethylene-free conditions. The presence or absence of ethylene did not affect flesh browning and bleeding symptoms. Free water content, a quantitative measurement of mealiness, was higher for peaches stored in 3 ppm ethylene than for peaches stored in ethylene-free conditions.
