Studies were carried out to characterize the quality of, and maturity changes, in peach (cultivars Flavorcrest and Elegant Lady) during maturation and ripening stages to develop an objective harvest index based on non-destructive parameters and to evaluate statistical models to predict maturity measured as the ethylene evolution rate (EER). Forty-eight fruits of similar diameter and tree position were harvested from the Metropolitan region, Chile, at 3-5 day intervals during maturation and ripening stages. Non-destructive measurements such as fresh weight, fruit diameter, EER, ground and cover colour were measured for each fruit. Destructive measurements such as firmness (7.9 mm tip), soluble solids (SS), titratable acidity (TA) as malic acid and SS/TA ratio were measured on 24 fruits, and the rest were held for up to 7 days at 20 deg C as a ripening period (off the tree) for both the non-destructive and destructive measurements. No models to predict EER in terms of a non-destructive parameter were found for both cultivars, which indicates that no reliable maturity indices could be established for these cultivars.
