Multivariate analysis of texture parameters on Golden apples treated with preharvest calcium sprays.

The correlation among various textural parameters and the mineral contents of apples after cold storage was determined by principal components (PC) analysis. Apple cv. Golden Smoothee trees grown in Spain were treated in 1998 with 10 applications of Stopit (calcium solution at 1%) at 15-day intervals starting 10 days after full bloom (DAFB), 6 applications at 15-day intervals starting 60 DAFB, and 12 applications at 7-day intervals starting 60 FABD. Harvested fruits were stored in a chamber at 0.5 deg C and 92% RH for 6 months. Partial least squares (PLS) was used to analyse the correlation between the mineral contents and the textural variables. PLS regression coefficients indicated that although the Ca fruit content was correlated with the majority of texture parameters, the peel colour showed the highest correlation coefficient. Colour was a good indicator of the Ca content and N/Ca ratio in fruits. Calcium treatment significantly improved fruit firmness. Significant differences among calcium rates were observed only in apples treated with 10 and 6 application, and in 12 application treatments during the second part of the growing season. The calcium content in fruits correlated negatively with colour and positively with mechanical penetration measurements.
