Effect of heat treatment on physiology and quality of asparagus sprout.

Effects of heat treatment on physiology and quality of asparagus shoots were investigated. The results showed that the respiration rate and rate of decay were inhibited, and the decrease in the content of vitamin C and SOD activity were delayed.
