Characterization of some parameters of fruit quality of sapote mamey, Calocarpum sapota (Jacq.) Merr., in different conditions of storage.

The postharvest characteristics of Calocarpum sapota [Pouteria sapota] fruits stored at 15 plus or minus 2 deg C and treated with 5% CO2, 5.6% of oxygen and 89.3% of nitrogen for four weeks were studied. The soluble solids content of fruits treated with CO2 at 15 plus or minus 2 deg C was between 15.65 and 22.80%, pH value between 5.38 and 6.83, and treatable acidity (as citric acid) between 0.05 and 0.38%. Fresh fruit weight loss reached values ranging from 8.23 to 10.11% during the thirteen days of storage. Fruits maintained good quality during the 3 weeks of storage.
