Storage of Oso Grande strawberries (Fragaria ananassa L.) under high CO2 partial pressure.

Two experiments were conducted to evaluate the effect of high CO2 partial pressures on postharvest life of strawberries (cv. Oso Grande). Strawberry fruits were exposed to 0, 10, 15 and 20 kPa of CO2 for 2, 3 or 5 days at 20 deg C (first experiment) or 10 and 19 days at 0 deg C (second experiment) plus 2 or 3 days at 20 deg C. Higher CO2 partial pressures, in both experiments, maintained higher pulp firmness and reduced rot incidence but induced higher sepal browning. There were no beneficial effects of CO2 treatment on the firmness, total soluble solids, titratable acidity, red colour evolution, sepal browning and rot incidence. CO2 levels did not affect aroma and flavour of the fruits. At high CO2 partial pressure (20 kPa) and low temperature (0 deg C), the quality of Oso Grande fruits was maintained during 20 days of storage.
