The aim of this work was to evaluate the influence of mineral (especially nitrate) fertilization and stored seed moisture together with storage temperature on selected parameters determining the technological value of stored wheat. The results showed that an increase in fertilization with nitrate compounds caused an increase in protein and gluten content in the examined seed. The storage conditions did not basically change the chemical composition of the seed even though in some cases they might have led to an increase of gluten content, but it was of much worse quality compared to the natural one. Moreover, the storage conditions influenced the mechanical resistance of the seed and allowed fungal microflora to develop in samples from fields treated with the highest amounts of nitrate fertilisers.
