Effect of chitosan coating on quality of Chinese bayberry fruits.

Fruits of Chinese bayberry (Myrica rubra) cv. Biqi were soaked in distilled water (control) and in 0.5 and 1% chitosan solution for 3 min and stored at 2 plus or minus 1 deg C, respectively. After harvest, the respiration rate and content of reducing sugar of Chinese bayberry increased, while the fruit hardness and the contents of total sugar and total acid decreased. After treatment with 1% chitosan coating, respiration rate decreased, fruit hardness was less changed, and the contents of total sugars and total acids deceased more slowly. Correspondingly, the increase in reducing sugars became slower. After storage for 16 days, a higher market value was retained in the treated fruits.
