Effect of precooling and relative humidity of the storage chamber on the postharvest quality of peaches (Prunus persica (L.) Batsch), cv. Chiripa.

Chiripa peaches were subjected to slow cooling (24 h) or fast cooling (8 h) in either humid air (close to 100% RH) or dry air (70% RH), and subsequently stored for 4 weeks at 0.5 deg C plus or minus 0.2 deg C in high RH (95%) or low RH (90%) plus 2 days at 20 deg C. Fast cooling with humid air or with dry air reduced fruit weight loss. Storage in low RH increased water loss and resulted in visible shrivelling of the fruits. Pulp firmness and skin colour were not affected by cooling rate or humidity during storage. Low RH in the storage chamber did not reduce rot incidence. Fast precooling with RH near saturation and high RH (above 95%) during storage are recommended for improved maintenance of peach quality during cold storage.
