Effect of coating chitosan on active oxygen metabolism in Chinese arbutus fruit (Myrica rubra Sieb. et Zucc.).

M. rubra fruits were coated with 0.5% or 1.0% chitosan and stored at 2 deg C. In non-coated control fruits, superoxide dismutase (SOD) activity declined slowly, and ascorbate peroxidase (APX) and glutathione reductase (GR) activities and malondialdehyde (MDA) content increased slowly during the first 6 days of storage. SOD, APX and GR activities declined sharply and the active oxygen producing rate and MDA content increased rapidly in the following 6 days of storage. Coating with 1% chitosan delayed the decline in SOD, APX AND GR activities during the latter half of storage and maintained MDA content and the oxygen producing rate at a low level. Coating with 0.5% chitosan had no significant effect on the above characteristics.
