Use of retarders on tomato fruits ripening storage under modified atmosphere conditions.

Retarders have improved the postharvest conservation of fruits and vegetables. The variations of quality parameters among stored tomatoes at room temperature during four weeks in a modified atmosphere (MAP), with and without retarders from laboratories or commercials ones. The treatments were: covered with a polypropylene PD-960 film; treated with a commercial ripening retarder; treated trays with potassium permanganate as ethylene absorber; and the control. The use of polymer film under modified atmosphere maintained the desirable organoleptic characteristics in tomatoes for two weeks. The presence of ethylene absorbers retarded fruit colour development.
