The quality of mature ripe and mature green sapote andino (Quararibea cordata) fruits under controlled and normal atmosphere storage at 15 plus or minus 2 or 27 plus or minus 2 deg C was investigated. CA storage atmosphere comprised 5.1% carbon dioxide, 5.6% oxygen and 89.3% nitrogen. Storage period was 4 and 2 weeks for the mature green and mature ripe fruits, respectively. During 4 weeks of storage in CA, the total soluble solids (TSS) of fruits harvested at the mature green stage decreased. pH also decreased during storage. CA had poor effect in preserving quality during shelf life.
