Tolerance of a very late season peach cultivar to temperature and atmosphere composition.

Peach (Prunus persica) fruits cv. Jesca were cool-stored in air at 95% relative humidity and temperatures of 0.5, 2, 5 and 10 deg C during the first season. In the second year, fruits were kept in boxes with different atmospheres: 10% carbon dioxide + 21% oxygen; 0.03% carbon dioxide + 1% oxygen; and 0.5% carbon dioxide + 1.5% oxygen. Peaches stored at 5 deg C developed chilling injury (CI) after 15 days of storage. Peaches stored at 2 deg C showed damage after 3 weeks of storage. Samples stored at 5 deg C showed the lowest final values for acidity. Acetaldehyde and ethanol production was higher in 10% carbon dioxide + 21% oxygen atmosphere than under low oxygen conditions. Low oxygen levels had adverse effects on Jesca colours. Jesca exhibited excellent storage behaviour at 0.5 deg C, due to delayed onset of CI symptoms.
