Influence of delayed CA storage on ascorbic acid content and brown-heart incidence in Rocha pear.

The relationship between controlled atmosphere (CA) storage, brown heart incidence and ascorbic acid content in fruits of pear cv. Rocha was determined. Fruits were stored under CA consisting of 2% oxygen combined with 0.5 or 1.5% carbon dioxide. Initiation of CA storage was delayed for 20, 40 and 60 days. Skin colour of pears stored under delayed CA turned yellow faster than under normal CA. Brown heart incidence increased with storage time for both CA compositions. Four months after harvest, the lowest brown heart incidence was in fruits stored in CA after 40 and 60 days delay. Ascorbic acid content was higher in fruits subjected to 60 days delay than those subjected to 20 days delay in CA storage.
