Gas exchange rates of pear cv. Conference during controlled atmosphere (CA) storage, with high and low carbon dioxide, were modelled. Pear fruits were stored at CA containers with 2% oxygen and 0.7 or 5% carbon dioxide. Gas exchange rates were measured at harvest and after 2 and 4 months of storage of fruits from 3 harvest times, and after 5 weeks and 8 months of storage of fruits from the third harvest. Oxygen uptake at harvest decreased with later harvesting dates, but there was no difference in fermentative carbon dioxide production.
