To study some physiological and biochemical characteristics of the apple tissue affected by Jonathan spot, samples of sound and affected fruits were analysed during storage. The respiration rate of affected tissue was reduced by a factor of about 1.75 compared with sound tissue. Calcium and anthocyanin contents were also reduced. Catalase activity was slightly higher in the sound epicarp and the mean polyphenol oxidase [catechol oxidase] activity was significantly higher in the affected epicarp than in the sound one. Peroxidase activity was also higher in the affected tissue. The permeability measurement demonstrated that the electrical conductivity and electrolyte leakage of the affected tissue were higher than those of the sound tissue.
