The lipid composition of sound and superficial scald affected skin of Jonagold apple after removal from controlled atmosphere (CA) storage was studied. The quantitative fatty acid composition of apple tissue affected with superficial scald was compared with that of sound tissue, obtained from the same fruit. The most consistent difference was with linoleic acid, which was higher in sound skin. At the same time, the sterol content increased (especially stigmasterol content) in affected skin, compared to sound tissue. The stigmasterol to sitosterol ratio increased in skin affected by superficial scald, from 0.007 in sound skin, to 0.018.
