The organoleptic qualities of tomato: conclusive trials The influence of storage temperature and ripeness at time of harvest.

The effects of storage conditions on the organoleptic quality of tomatoes were investigated in several varieties. Tabulated data show that the adverse effects of cold storage predominated. Switching to a temperature of 18 deg C restored taste, with notable differences between varieties.
