Drying of ginger using solar cabinet dryer.

Considering the multiple advantages of dried forms of ginger and based on the meteorological data available for the region for the past several years, an attempt was made to dry ginger in solar cabinet drier so that a part of the huge amount of surplus ginger can be saved from postharvest losses and thus farmers can be benefited. From the present study, the solar cabinet drier was found to be practically useful for drying roughly peeled longitudinally split forms of ginger rhizomes to safe moisture level (less than 10% moisture) within 4-6 days (15.8-27.3 BSSH). Depending upon the variety, after drying in solar cabinet drier, there was 0.1 to 0.23% decrease of oleoresin in the roughly peeled, split rhizomes in comparison to the same present in the fresh rhizome just after harvest.
