The activities of different apple cultivars (Florina, Produkta, Rezista, Selena and Golden Delicious) under different conditions as shown by the cultivar's ethylene production were compared both during maturation and subsequent cold storage. Based on the quantity of ethylene released from intact fruits, the effectiveness of the coating preparation, Semperfresh, was assessed. Ethylene production from cold-stored fruits differed across cultivars and also depended on maturity at the time of harvest. The fruits of Rezista, which were harvested after optimal maturity, showed a higher ethylene production at 3 deg C. No postharvest peak of ethylene production was observed at this temperature. The effectiveness of the preparation depended on the cultivar and storage temperature. The protective coat slowed down the metabolism in Golden Delicious at 3 deg C. No similar effect could be shown in Selena.
