An experiment was conducted during the winter season with healthy, flowering chrysanthemums. For dehydration, the floral parts were placed in sand beds in racks placed in a hot air oven. The temperature was maintained at 40 deg C for 35-50 h according to the size and structure of the floral parts. The colour and structure of the floral parts showed no change after dehydration. Total chlorophyll was significantly reduced in the dehydrated parts, compared with the control. Enzymatic (peroxidase, IAA oxidase and polyphenol oxidase [catechol oxidase]) activity examined in dehydrated floral parts was also significantly lower comparedwith the control. The injury index increased with dry weight of dehydrated floral parts. Length and diameter of floral parts remained the same.
