This review covers crop produce quality deterioration due to respiration, ethylene production, senescence, dormancy breaking, water loss, fungal and bacterial pathogens, and physiological disorders; quality assessment based on appearance, texture, flavour, and aroma; quality maintenance through cold storage, postharvest treatments (surface coatings and packaging, curing, dehydration, chemical control of pathogens, and irradiation); and future trends (development of technologies for nondestructive grading and shelf life evaluation, replacement of postharvest chemicals, and production of genetically modified fruits and vegetables) in produce quality improvement.
