Effects of different atmospheres on the postharvest physiology and quality of the sweet cherry.

The postharvest physiology and quality of sweet cherry (Prunus avium cv. Hongdeng) fruits subjected to controlled atmosphere storage (CA; 5% O2+5% CO2 or 5% O2+10% CO2) and modified atmosphere packing (MAP; low-density polyethylene bag or ordinary plastic bag) were studied. CA was more effective than MAP in inhibiting fruit rot and flesh browning; retaining fruit firmness and colour; reducing pulp ethylene and ethanol contents; and delaying the increase in polyphenol oxidase [catechol oxidase] and peroxidase activities, and malondialdehyde content. Under CA conditions, fruits could be stored for 60 days without adversely affecting flavour. Storage under 5% O2+10% CO2 was more effective in enhancing fruit quality than storage under 5% O2+5% CO2.
