Evolution of colour in Tendral melon stored under traditional conditions.

This paper shows the evolution of colour parameters: lightness, chroma and hue of skin and flesh of Tendral melon during postharvest storage under traditional conditions: hanged in netted bags and on straw, in a dark and cool place. A small reduction on skin L* and C* values is observed after 15 days of storage, remaining afterwards almost constant. Skin and flesh hue (h*) show a sharp diminution between 60-75 days of storage. An increase of flesh C* is observed at the end of storage (90 days) as referred to fresh sample. The results show significant correlations between flesh h* and skin colour parameters (L*, C* and h*).
