Effect of 1-MCP on storage life, quality and antioxidant enzyme activities of broccoli.

The quality of broccoli florets treated with 1-methylcyclopropene (1-MCP at 0.0, 0.5, 1.0, 2.5, and 5.0 micro litre/litre) before storage in plastic bags for 6 h at 20 deg C was studied. Treatment with 1-MCP extended the storage life and delayed senescence by reducing chlorophyll loss in florets, with 2.5 micro litre/litre being the most effective concentration. The ascorbic acid and protein contents of samples decreased with storage; treatment with 2.5 micro litre 1-MCP/litre gave higher ascorbic acid and protein contents than the control. Superoxide dismutase activity was higher in the control at 60 h, but was higher in florets treated with 2.5 micro litre 1-MCP/litre after 72 h. Catalase activity declined during storage; however, higher catalase activity was recorded for treated than for untreated florets. Peroxidase activity, which was higher in the control than in 1-MCP (2.5 micro litre/litre)-treated florets, declined during the first 36 h up to 76 h.
