Physical properties of mushrooms (Agaricus bisporus)
The Department of Agroenergetics and Food Process Engineering of St. Stephen’s University, Gödöllö, Hungary have conducted experiments to check the cooling time and to assess the storability of cultivated Agaricus bisporus. For pre-cooling forced wet air-cooling furthermore vacuum cooling was applied and afterwards the products were stored under the conditions simulating different sort of cold chains [1], [2]. Prior to the tests the following physical properties were determined and statistically evaluated for 6 kg of cultivated Agaricus bisporus samples: 7 sizes of each single mushroom, surface, volume, density, bulk density, internal porosity, specific heat, heat conductivity and evaporation coefficient. The paper presents results on the pore surface and the coefficient of water vapour evaporation from the parameters mentioned above.
