Effect of controlled atmosphere storage on quality changes of fresh cut ripe papaya  Fresh cut ripe papaya were stored for 18 days at 2°C under various controlled atmosphere conditions (CA) at 1 % O2 + 10 % CO2, 1 % O2 + 15 % CO2, 5 % O2 + 10 % CO2, and 5 % O2 + 15 % CO2 with exposure to air as control. Changes in weight loss, outer and inner flesh firmness, color and sensory quality were investigated. The results showed that all of the controlled atmosphere conditions significantly reduced the weight loss, color changes and outer and inner flesh firmness changes and extended the storage life of fresh cut ripe papaya to 18 days, compared to the storage in air. Among those combined with 10% CO2 gave the best result in reducing color changes, firmness changes and high sensory score than controlled atmosphere conditions.
