Inhibition of glycoalkaloid synthesis in potato (Solanum tuberosum L.) tuber by CaCl2 under light exposure
When potato tuber, an underground stem, was exposed under light source, chlorophyll synthesis has been induced in tuber peel. The result showed that total glycoalkaloid content of untreated-CaCl2 (control) increased from 5 to 22.5 ppm whereas treated-CaCl2 could reduce glycoalkaloid synthesis under light exposure. Chlorophyll content in control was slightly increased from 0.001 to 0.05 mg/gFW after 6 days exposure and sharply increased to 0.65 mg.gFW at day 14 while there was little changed in chlorophyll content of treated-CaCl2 tuber. Flesh firmness of all treatments decreased which greatly related to the increasing rate of weight loss. Potato peel was completely green under light exposure for 14 days.
