Effects of heat treatment on the respiration of mango “Nam Dok Mai”
Heat treatments could reduce respiration and prolong shelf life of fruits. In this work, the effects of heat treatment on the respiration rate of mango cv. Nam Dok Mai were studied. Experiments for the determinations of respiration rates of mangos after heat treatments were performed in a closed system. Changes of the O2 and CO2 concentrations in the close system were recorded with time. It was found that Michaelis-Menten equation with uncompetitive inhibition kinetic fitted well with the experimental results. The experimental results indicated that the respiration rate of mango decreased when increased the heat treatment temperature and the duration time. The respiration parameters of the mangos after heat treatments were determined by comparing the results of the respiration model with the experimental results. The effects of heat treatments on the qualities of the mango were observed.
