Creating value of small family mushroom enterprises in Thrace region, Turkey

It was determined eight mushroom enterprises during 2002-2003 production period. Five of them are small family farms and the others private modern enterprises. Research findings were obtained by face-to-face interviewing via using questionnaires with whole enterprises.
Small family farms have 183 m2 production plant as an average and their total production was about 4941 kg in mentioned production period. Average yield was found 9 kg/m2. Gross production value was calculated as € 11555 and variable costs were € 10365. Gross margin was determined as € 1190 and the cost of 1 kg of mushroom was calculated as € 2,10 . Average selling price was 2,33 €/kg. Consequently the gross revenue in 1 kg of mushroom production was € 0,23.
In modern enterprises average production plant was 667 m2 and total production obtained in whole year was 40020 kg. Average yield was calculated as 15 kg/m2. Gross production value was determined as 81895 € and variable costs were realised as 44050 €. Gross margin was 37845 € and the cost of 1 kg mushroom production was calculated as € 1,10. Average selling price was 2,04 €/kg and the gross revenue obtained for 1 kg was realized as € 0,94. Net revenues were calculated as € -1,20 and € 0,47 respectively.
